Nihari doesn't tolerate shortcuts. The name comes from nihar — morning — because in old Lahore the pot went on at night and opened at dawn. Ours works the same way: beef and whole spices simmered for hours in the daig until the meat gives up and the gravy turns dark, glossy and rich.
Order it plain for the classic, or fry — finished with a sizzling tarka — when you want it louder. Either way it lands with the proper garnish: ginger matchsticks, green chilli, fresh coriander, lemon on the side.
